Hot weather food to bring friend with a new baby?

I usually make soup, pasta, or quiche, all of which are kind of cold weather food. The quiche would be good with a salad, but I really don't want the oven on for an hour tonight (we don't have central air). Any suggestions? I already made some muffins and I was going to bring some fresh cut fruit, but I'm lacking anything with substance.

  • Yeah I second pasta salad. Another idea might be wraps. You could put anything or everything that you want in them. You could either make the with tortilla shells or lettuce.
    Oh another idea, broccoli salad, potato salad, or cole slaw. Oh, and no bake cookies! (There's lots of boxed desserts they sell that are no bake. I know there is a Oreo no bake dessert that most super markets sell.)

  • I vote for a 3 ft hero they can eat for a few days. Also if she followed the "rules" she must be missing deli meat like a fiend.

  • PP's beat me when they mentioned crock pot meals. I'd die without my crock pot (or just starve). I know if someone was bringing me food I'd also really appreciate cold pre-sliced veggie and fruit trays and meat and cheese trays.  Finger foods, especially with a baby.. because I'm assuming ain't nobody got time to find a fork.

  • I love to make quinoa salad! 

    Make a batch of plain quinoa. 

    Add:
    a block of feta cheese cut into cubes (you can also use the crumbles- I just prefer the cubes)
    cucumber cut how you like it
    cherry tomatoes (I cut them in half if I'm feelin' fancy)
    italian parsley
    salami (for the non-pregos)
    olives (if that's your thing)

    Make a dressing:

    Juice of 1-2 lemons (depending on the size of your salad)
    zest of about half a lemon
    olive oil
    Honey to taste
    salt and pepper 
    (can sub in the juice of half an orange instead of the lemon and honey)

    Mix it all together while the quinoa is still pretty warm and shove it in the fridge until it's ready to serve. 
  • Pulled pork or chicken in the crock pot would be a good one with some good quality, yummy rolls and salad of any kind, potato, pasta, green. It freezes and reheats well if there isn't any sauce to get watery.

    That sounds AWESOME...and easy! Would probably work well with couscous too...

  • The quinoa salad is awesome and wicked easy...I've found a few good recipes on pinterest that got me through first tri nausea. Quiche will definitely work too! Mom is making a few different kinds for my shower in a few weeks and then doing different kinds of salads.

  • Another crock-pot vote.  You can make a few batches and freeeze flat in ziploc bags.  They can then heat up whenever they want.

  • Another vote for taco salad here. A relative brought over one when I was a kid that I still love to make: lettuce, Mexican cheese blend, diced tomatoes, taco meat (we use ground turkey), western dressing, and crumbled up Doritos (what made it awesome as a kid).

  • You could do vietnamese spring rolls...just gotta get the rice paper and some things for the filling (I do rice noodles, lettuce/greens/herbs, and like shrimp or pork) and get rolling!  Simple dipping sauce for it: mix hoisin sauce and peanut butter, chili pepper sauce if they like it spicy, heat up in the microwave for a few seconds.
