Meal ideas

Hi! I haven't posted here much since it became so difficult to lurk other boards, but I could use some help with lunches. I feel like I feed Dd the same 5 things and I could use some fresh ideas. Plus, we're going through the phase where she hates veggies- refuses to eat them, then throws them on the floor. Meal time is super fun right now... TIA for your help!

  • I feel like we're also in a bit of a rut, but if you add up each of our 5 meals, I think we'd have some variety! 

    One of our standbys are meatballs made with a bit of rice and shredded carrots.  We make a big batch and freeze them.  We also have a baked whole chicken every week or two and take some of the meat and freeze it in toddler meal size bags so it's ready to defrost and go.  We usually feed her these meals with a side of veggies and some berries. She also usually has canned salmon about once a week, and then often leftovers from dinner the night before (today it's lentil soup).

  • Yes! We are a carb and fruit family for sure!! I wish she'd eat more meat, especially at lunch. I love the meatball idea. Dd loves bagel pizzas with spinach, red sauce, and cheese. If it's not dairy, carbs, or fruit, she throws it on the floor.

  • The only way I can get DD to eat veggies right now is to chop them up finely (broccoli mostly) and put them in scrambled eggs with cheese!  This is her main form of protein and veggies right now. Plus she LOVES sweet potatoes.

  • My son loves meatloaf!  You can make it with ground turkey too. 

    Some other go to meals are: Rotini pasta, whole wheat baby pancakes with fruit, homemade fish sticks, bananas and pb.   He loves stuffing with turkey, perogies, etc.

    My problem is my son eats very lil but he still seams to have tons of energy.

  • You can make veggie muffins---like zuccinii and carrot. I don't have a recipe to recommend, but I have seen them on pinterest and always intend to make them when I have some time.

  • We were/are going through the same thing, and i know it's cheating sort of, but i give him green smoothies. I make one big one and split it between him and i, i do 3 strawberries, a handful of blueberries, a quarter cup of whole oats, a quarter cup of greek yogurt, one banana, a half cup of apple juice, or almond milk, and a cup of raw kale, plus around half a cup of mini ice cubes. Blended SUPER well. He downs it.

    7/5/11 MC at 8 weeks. 5/17/12 BFP, twins EDD 1/20/13! 6/20/12 Baby B's heart has stopped beating. 8/31/12 Baby A is a boy! And is perfectly healthy and thriving. 1/19/2013 emergency c-section, Thoren is perfect. 3/1/2013 told i will never be able to conceive again. 12/16/13 told they were wrong!
