Food Creativity, Anyone?

So, C has decided he won't eat avocado anymore unless it is spread on bread. Does anyone have any creative ways to use avocado? And he loves hummus but I don't know how else to give it to him except on bread. So, I need some help there too. We are trying to limit our carb intake around here. I mean, have you seen this kid's thighs? (Kidding, kidding...)

  • I think with either one you could put them on veggies or crackers.
  • I spread them on his lunch meat (low sodium, nitrate free) and kind of roll it up.

  • My LO is still eating it chopped up, she loves it. But, I think you could put it on a cracker, or a cheddar goldfish/bunny/other small cracker type food that you could "pre-dip" into the avocado. You could put it on a tortilla and roll that up. We eat Avocado with eggs regularly, though we're not giving scrambled eggs to LO just yet. We eat them on the side of the eggs. You could scoop the egg and avocado up together in a bite for LO. Or maybe do a quesidilla with the scrambled egg and avocado inside.

  • I put it in her yogurt. I whizz it up with strawberries and blueberries. Just makes it nice and creamy.

  • I've seen recipes for avocado salad dressing. Maybe dip veggies in it and see if your LO will eat it?

    Before, during, or after you cook the eggs? (I've obviously never considered avocado in eggs)

    I made baby muffins last night and the recipe calls for avocado. I think it can be subbed frequently in baking.

    Thanks for sharing this! I've been looking for a baby-friendly yet eggless muffin. Yay!
    In almost any baking recipe you can substitute Apple Sauce for the eggs. 1/4 cup Apple Sauce = 1 egg. If the recipe calls for baking powder increase that too, I usually just heap whatever measurement.
