Weird smelling milk

I always put leftovers back in the fridge and offer at the next feeding. I've never had an issue with this but the other day he wouldn't drink it and I noticed it smelled really sweet, like maple syrup or something. I wasn't sure what that meant but I figured he knew best so I didn't mess with it, just chucked it. Is that what spoiled milk smells like? I figured it would be more like a sour smell.

    Oh I just thought of something, the nanny puts his probiotic powder into his milk once a day, I wonder if it was a bottle that had leftover probiotic in it?

    I'm not sure if probiotics can overgrow when left in a bottle for a while? Not sure how they work, but since it's bacteria, it seems plausible I guess. You will know for sure when it is spoiled. It's gross.
