My personal struggle is with meat right now. He does not like ANY kind of meat. So I cook tofu separate for him and edemame. But I really wonder about the edemame because it comes out as whole as it goes in (sorry for the visual).

    Bora Bora Fireballs https://www.theclothesmakethegirl.com/2013/03/05/bora-bora-fireballs/

Basically a meat ball with pineapple, jalapeno (can leave out if your LO doesn't like spice) and rolled in coconut
    Those sound amazing!

DS loves Weelicious' spinach gnocchi.  I had DH taste one and even he loved it (he's the picky eater in the family!); we are going to make grown-up versions later this week, too.

Oh! Since so many of you like pancakes :). This used to be a favorite of Ben's:
    Banana Pancakes
    3 eggs
    1 banana
    1 tsp sea salt
    1 tsp cinnamon
(you could even add a bit a vanilla if you wanted)

Blend together all the ingredients until smooth. There should be no lumps left from the bananas. Pour like pancakes in a skillet on medium heat. (Sometimes I add blueberries at this point). Let set and flip.
