Reheating food

I've been making a number of things from the My Lovely Little Lunch Box blog, thanks for the suggestion to whoever posted a link to that recently, the problem is DD obviously can't eat 12 muffins in a reasonable time. She actually only eats about half a muffin a day so I froze a bunch of them. 

Should I only bake 4 at a time and freeze the rest of the batter?
Should I do what I did, make the whole batch and pull a few into the fridge at a time to defrost?
Any idea how long they can stay in the freezer before going bad?

Next question, quiche [or "impossible" pie] we made one last night and had left overs this morning but I'm thinking of making muffin sized ones so I have them ready for breakfast/lunch for DD. 

I think I'd have to make them all in advance and freeze them so any advice on reheating them?

Any other website suggestions for LO approved recipes?
Any other tips for storing left overs? We've never really cooked more than we could eat so left overs are pretty new territory for me.
