Recipe exchange!

Being the new year is upon us, I see that many of us have resolutions to cook more/eat healthier. Let's share our favorite (and easiest!) meals with each other! (Emphasis on easiest...I'm not the best in the kitchen!

    Not sure about healthiness, but made an easy chicken soup this weekend that was tasty.

    Two frozen chicken breasts in the bottom of the crock pot. Add can of corn and rotel (undrained). Add can of black beans (drained and rinsed). Mix in packet of ranch dressing mix, tbsp cumin, tsp chili powder, tsp of onion powder. Throw a brick of cream cheese on top and cook on low 6-8 hours. Mix in the cream cheese after it melts and shred the chicken about an hour before serving.

    You can make a lot of things a little healthier just by getting rid of any vegetable oils you have and use coconut oil for cooking(I use for all my baking, too, but I have to be more aware of it's presence as it is a bit touchy- it solidifies at around 70 degrees so eggs and butter have to be room temp, no biggie)

    Depending on the brand, it usually has no coconut taste or odor so you will never know the difference
