After trying three or four different times with various advice and usually unimpressive results, I finally made fluffy pancakes this morning! 

The first time I made pancakes they were pale and flat and tough, but smelled good.  Then there were a couple middle tries that got little smidges better.  Last time the first two were fluffy but all the rest were flat and unfortunate.  This time the whole batch was beautiful.

Trying to get better/braver at cooking was one of my goals this year.  Pancake achievement unlocked!

  • @Mittens14 I use the recipe here: https://www.inspiredtaste.net/24593/essential-pancake-recipe/ and follow their advice, plus DH's advice to use 3 T baking powder instead of one since ours is old and thus the leavening power is not as much, plus following my dad's advice to let the batter sit for ten or fifteen minutes, plus the final touch of Alton Brown's advice from his baked goods cookbook to put the dry ingredients in the food processor for a few seconds before you add the wet ingredients. 

    Pancakes are the first thing I've been determined to cook again until I get it right.  Good luck if you're determined to conquer pancakes.

    Whew! Kudos to you for all the work. I just use a boxed mix.  ;))

    ETA now I'm craving pancakes!

  • Congrats! I've never made pancakes from scratch! I'm impressed :)

    But I do know that if you stir the box ones (or any of them, I suppose) for too long, they get tough. Hope that helps someone!

    Yeah.  I forgot to add that to my list of tips.  I actually did a google image search to try and figure out what "not overmixed" batter looks like, because the recipe says no blobs of dry flour but also it can have a sort of chunky look, which made no sense to me.
  • I had no idea I was overmixing the batter! I know that's what I do, because in my head I think it needs to be perfectly smooth before pouring.

    Every time I make pancakes they end up more like funnel cakes because I don't know how to not use too much oil.

  • Nothing like homemade pancakes! It's easy to overmix the batter if you don't know what to look for. The same is true about homemade brownies. I used to use an electric mixer for them, but we just use a spoon to mix now.

    Ooooh, brownies from ingredients.  If I hadn't used the last of the flour on my pancakes, I think I'd be jumping into a new cooking project.  :)
