WFD - this week. I need inspiration

What is for dinner this week. We have a lot going on, so I want some casserole type things that I can make ahead. Lasagna is all I've got. Comfort food sounds good too. What are you having, What is your favorite casserole that you can make ahead and your favorite comfort food. Bonus points for clicky.

  • I haven't had this in a while but I've made it several times and really like it. Kinda comfort-foody and a casserole. :)

  • Sunday:  Chicken kebabs and grilled potatoes
    Monday: DH is making some kind of roast and I'm making salad, acini and green beans to go with it
    Tuesday: Crock pot BBQ pineapple chicken with brown rice and broccoli
    Wednesday:  Breakfast for dinner
    Thursday: Tacos
    Friday: Spaghetti, garlic bread, salad
    Saturday:  Slow cooked apple pork tenderloin, mashed potatoes and broccoli

  • Sunday - Bun Thit Nuong (marinated pork with vermicelli noodles and pickled veggies and some other stuff) and chao for our son (chicken rice porridge)
    Monday - Left over Bun Thit Nuong and leftover chao for D
    Tues - Bakes chimichangas (with leftover chicken from chao ga)
    Wed - Meatball subs + veggie side
    Thurs - Skinny Taste chicken cordon bleu https://www.skinnytaste.com/2009/03/chicken-cordon-bleu.html

    I also like this crock pot meal: https://foodfamilyfinds.com/slow-cooker-chicken-philly-sandwiches-recipe/ It only takes 5 hours, so you have to make it at lunch time instead of first thing.
  • It has been soooo stormy and rainy here.  I love it!  However, it has caused my nesting and craving of comfort food, so keep that in mind when you gain 10lbs reading what I have planned for this week!  :-)

    Sunday - Beef stew and cornbread
    Monday - Homemade mac n' cheese and marinated veggies
    Tuesday - Sloppy joes, fries and salad
    Wednesday - Crockpot BBQ Chipotle and Peach Chicken, creamy polenta, green beans
    Thursday - Black bean quesadillas, guac, chips & salsa
    Friday - Kielbasa and white bean stew, making bread in my bread machine for the first time!
    Saturday - no clue

  • Tonight - chicken noodle soup, rolls
    Tuesday - halibut, veggie tbd, rice
    Wednesday - turkey bugers, salad, sweet potato fries

    Sunday - chili and cornbread

  • Sun - turkey meatloaf and baked potatoes
    Mon - healthy fettucini (made with cauliflower), garlic green beans
    Tues - chicken and dumplings
    Wed - out
    Thurs - cool ranch chicken tacos (ranch seasoning packet, taco seasoning, chicken broth, chicken in the crockpot), roasted corn
    Fri - vegetarian chili and cornbread
    Sat - dinner at parents' house

  • I'm doing Thanksgiving stuffed portobellos. Just shredded chicken or turkey, peas, carrots, and dressing stuffed in them and pop them in the oven. Can top with gravy.

    I also just made chili relleno with the crockpot salsa shredded chicken. Added corn, cream cheese, egg, and cilantro in them. That was really good.

    I know it sounds weird but I really enjoyed cheeseburger casserole. We tried one from pinterest with pasta instead of potatoes. It tastes like sloppy joes. So if you really like tangy sweet sloppy joes you would like it.

  • chicken noodle soup

    chicken marsala, sautéed mushrooms and spinach, pasta, raw veggies for the kids

    3 bean chili, honey cornbread

    pulled pork, wheat rolls, corn on the cob

    calzone (spinach and eggplant for me, olive and Canadian bacon for DH), kids will eat mac and cheese and raw veggies

  • In no particular order. Steak and twice baked potatoes, tacos, stuffed peppers, baked chicken with Mac-n-cheese and broccoli, taco soup and broccoli cornbread. Tuesday night we have a neighborhood watch meeting for the whole neighborhood and they are serving hamburgers and hot dogs.

    Today was list making day for us - on the docket this month is spaghetti, chicken casserole, buffalo chicken mac and cheese (tonight's dinner), homemade pizza, stew, taco lasagna, baked chicken, turkey meatloaf, turkey burgers, salmon, shish ka bobs (minus the bob - I just cook it off the stick), breakfast for dinner, sub sandwiches, beans and cornbread, and a bunch of leftovers from all that! :)

     

    ETA:  Our chicken casserole is super easy, but a lot of canned stuff.  1 can corn, 1 can peas/carrots, 1 can cream of chkn soup, 1 can of milk (like real milk measured in an empty can), 2 Tbsp All Spice seasoning, 1/2 pkg egg noodles, a can of chicken or real shredded chicken, buttered bread cut into small squares on top, bake for an hour at 350.

     

     Taco lasagna also easy - taco meat, kidney beans, ricotta cheese, shredded cheddar, black beans, corn - layered in a round casserole dish between tortillas and baked.

    I usually do my recipe planning and grocery shopping on Mondays, but we picked up a nasty cold over the weekend and I didn't get around to it until this morning. Here's what our week looks like.

    Mon- DH, like a knight in shining armor, brought home Panera soup
    Tues- Philly cheesesteaks with a homemade spicy beer cheese sauce and sweet potato fries
    Wed- Balsamic chicken, parmesan potato pancakes, caprese salad
    Thurs- out for our 4 year wedding anniversary!
    Fri- Chicken and broccoli stuffed shells with roasted garlic Alfredo sauce
    Sat- Sweet and spicy Asian chicken in the slowcooker with Jasmine rice and sauteed zuchinni
    Sun- Family Party
