NBR: Recipes

Any quick, balanced, and tasty dinner (emphasis on quick) recipes that you ladies have to share/swap? I am new at this SAHM thing and am trying to get more creative in the kitchen.

  • White chicken chili is pretty quick, and ohhhh so tasty... I used cubed chicken breast instead of the ground chicken because I like it better, but ground chicken is faster. I also add a jalapeno to this recipe and serve over rice, since it is a little soupy. Add sour cream and saltine crackers or tortilla chips... mm..

  • This is something I make regularly- Angel hair pasta with spicy shrimp.

    I made this yesterday (my once a week attempt at cooking since i had DD) and added 2 cups of frozen broccoli florets (at the same time as you put in the shrimp) so it's a well rounded one dish meal -

  • I have a recipe for muffins that has 3 ingredients...

    1 box of spice cake mix
    1 can (15oz) of pumpkin
    1/2 bag of mini chocolate chips

    Mix all ingredients together.

    Cook at 350 for about 20-25 minutes (until toothpick comes out clean)

    I made this as a cake...used rectangle glass cake pan and spooned cool whip on as a topping as we ate it.  YUM!  FYE It's not light and fluffy but more of a thick/heavy cake/muffin.

    Teriyaki chicken and stir fry veggies in the crock pot.

    Cube 2-3 large chicken breasts and place into crock pot
    Combine 1/2 cup chicken broth, 1/2 cup Island teriyaki sauce, 1/3 cup brown sugar, 3 garlic cloves minced.  Pour mixture over chicken

    Cook on low 4-6 hours.

    20 minutes before you are ready to eat, throw 1/2 a bag of frozen stir fry veggies in the crock pot and replace the lid.  20 mins is usually perfect for the veggies to be cooked, but still crisp and not soggy.  Serve with a side of rice.  Yum!

    ETA:  We like Trader Joe's Island Soyaki sauce.  Make sure you get some type of Island Teriyaki, regular will be too salty, IMO.  Island Teriyaki is more sweet.
