Crock Pot Girls: Give me your Favorite Recipes! :)

Wow, there are a ton of recipes out there.  A lot of the recipes seem kinda bland though.  What are your favorites?!

I want to try like a week of crock-potting -- lol, and then I will prob never do it again.

  • polynesian chicken..

4 pieces of chicken, one can of coconut milk, two cups of chicken broth, 1 cup of basmati rice, 1 lb of chopped or baby carrots (I substituted sweet potato here) 1 tablespoon of salt and some ground pepper. Cook on low all day. Add 1 cup of frozen peas 10 minutes before serving. I also added fresh cilantro.

It was really delicious, but I think I let it cook too long b/c the rice was just mush by the time we ate it :)

  • 2 cans enchalida sauce

    1 can nacho cheese soup

    1 cup water

    1 can precooked chicken

5 flour tortillas cut into strips.

Mix in crockpot - Cook on LOW for 4-6 hours.

Sprinkle with shredded cheddar cheese and let stand 5 minutes

    SERVE and ENJOY.

I haven't made it yet but the girls on my local board rave about the buffalo chicken lasagna.

I signed up to get it e-mailed to me daily.  I delete many of the recipes but it's nice to have them come to me daily to remind me to try new stuff out in my crock pot!

This.is.AWESOME!  Best pot roast ever, and ridiculously easy.  If I have time, I like to brown the roast first, and at the end I take out all the meat and veggies and thicken the gravy with a little cornstarch.

  • This is my (and my DH's) favorite recipe.  It serves a small crowd, too, so it is perfect for football games or parties.

    Italian Beef Sandwiches

In the crockpot, combine one roast (a cheaper, tough cut is fine), one can beef broth, one packet of "Good Seasonings" Italian dressing mix, one jar of giardiniera, and one jar of sliced pepperoncinis.  Cook on low for 8 to 10 hours.  Shred the beef and return to the crock pot.  Serve on Italian rolls with shredded mozzarella cheese.

This one is good, too -- perfect quick meal.

    Salsa Chicken

In the crockpot, combine two to four chicken breasts halves (one per person) and a jar of salsa.  Cook on high for 4 to 6 hours, or low for 8 hours.  One hour before it is finished, add one can of black beans and one can of corn.  When finished, shred the chicken and return to crockpot.  Serve on tortillas with shredded cheese, guacamole, sour cream, etc.

  • I love to make stuffed green peppers. It's so easy. Depending on how big our crock pot is, how many bell peppers you can fit. I can fit about three in mine.

3 green bell pepers,1lbs ground beef, 1 cup white rice, Large can of tomato soup.

Cup tops of peppers. Take out the seeds. Mix ground beef uncooked and rice add a little of the soup to the mixture. Stuff peppers with mixture. Pour the rest of tomato soup over top. Add any extra meat to on the sides of peppers. Cook on low to 5 hours. I make mashed potatoes to go with.

  • I'm sneaking over from TTTC, but my fav's in the crockpot are:

     Pot Roast

Place pot roast in the crock pot, cut up onions, add garlic, potato's and carrots and add water (about 1/4-1/2 way up the roast)

Cook on low for 7-8 hours and enjoy.

    My absolute fave is:

    Pulled Pork

Pork Roast (I usually use a shoulder roast that is still on the bone (I think its juicier)

Sliced onions, garlic, salt, pepper and garlic salt, and cover 3/4 way with ROOT BEER (you can also use Ginger ale if you'd rather)

Cook on low for 8 hours.

Remove the roast and set on a cutting board. Remove the onions with a slotted spoon and set aside to add back in.

discard the root beer in the crock pot.

do a rough chop of the pork and remove the bones.

Add the pork and onions back into the crock pot and add your favorite BBQ sauce. let warm for 20-30 mins. Enjoy on your favorite roll.
