What is your favorite and easy dinner to make? Also what is your favorite appetizer to make? I'm trying to make my grocery list for the next two weeks and it's taking a lot of time since Christmas and two parties fall during that time. Thanks!
Crock pot chicken parm - chicken, veggies and tomatoe sauce in the crock pot all day. Add shredded cheese just before serving.
Chicken fajitas - cook cut chicken with cooking spray, once cooked at teriyaki sauce and stir until coated. Serve in flour fajitas, with lettuce, cucumber, cheese, sour cream or salsa and other veggies. (Quick if you pre cut chicken). *one of DD's favorites*
Beef tacos - fry ground beef then add taco spices. Serve as above in flour fajitas or hard taco shells.

I like making soups this time of year- I made black bean last week, lentil soup yesterday. They're nice and warming in chilly weather, you can pack a lot of wholesome veggies and other good things into them, they can be made ahead of time if needed, they reheat well and often taste even better the next day. Let me know if you want specific recipes.
As for appetizers, my favorite things are usually pretty simple: brie wrapped in foil and baked until warm and bubbly served with sliced apples, bread, grapes, crackers, etc. Or some good goat cheese if brie isn't your thing. A platter with hummus, pita, feta, veggies, etc. is always yummy.
I went to a party a few weeks ago where there were deviled eggs as an appetizer. I know this sounds odd, but they were soooo good: there was a little curry powder in the eggs as well as some dried cherries, then garnished with fresh chives. OMG- they were to die for!
Crock pot salsa chicken---good as a meal ( with soft tortillas, or rice), and also good as an appetizer (with tortilla chips) I love it!
Here's my recipe: throw 2-3 chicken breasts, 1 jar of salsa, frozen corn and 1/2 can of black beans in the crock pot. Sometimes I add a dash of taco seasoning. Cook for at least 4 hours. Shred the chicken, then add some cream cheese ( I add about 3 large tablespoons) about 1/2 before serving. Serve over rice, on soft tortillas, or as a dip with tortilla chips.
Take a chicken breast and cut a big slit in the side. Stuff two pieces of herbed goat cheese inside (I use Boursin because they sell it at Costco) and two fresh basil leaves. Rub with olive oil, S&P. Bake on 375 until done, turning once.
It's more of a dessert-type appetizer, but our new favorite is pumpkin whip dip. Mix a can of pumpkin puree (not pie), a container of slightly softened Cool Whip, the powder only of a vanilla pudding mix and 1 tsp of pumpkin pie spice. Serve with graham cracker sticks or ginger snaps. Yummy and not too sweet.

Salsa chicken (cover 2 chicken breasts in salsa in the crock pot and plug in!) We adda cup of rice to the crock pot and place the chicken/rice//salsa in tortillas with cheese.
these all sound so good. I usually do soups, easy and like Cleo said, sometimes tastes better the next day. Roast in the crockpot. can be set up the night before and just turned on in the morning. Pulled pork or beef again in the crock pot take about a 2 lb roast (pork or beef) throw in some garlic powder, salt and pepper and 1-2 bottles of bbq sauce. cook on low for 8 hours and then take a fork and shred it. serve on buns.
I also like the cheesy chicken and rice caserol on the cream of chicken soup can. I don't have one handy but it's chicken breast, cream of chicken soup, rice, frozen veggies and shredded cheese bake until done.
sometimes I will just throw some chicken breast in the oven with olive oil and spices (depends on the mood I'm in) then when it's about done throw on a can of cream of chicken soup (with or without herbs, both are good) and sprinkle some parmesan cheese on it until the soup is heated.
Spaghetti is also a good easy meal.
as for appetizer, I cheat. I love tastefully simple stuff and usually have a bunch of their stuff on hand.
