I'm mostly marking to find later.. I'm flying alone cross-country w/ DD in a week and a half!
So far I've bought a belt attachment thingie to attach DD's carseat to my carryon suitcase (which I'm only bringing to help me carry the carseat since we bought a seat for DD on the flight). I'm also planning on packing a ziplock baggie for dirty clothes and an extra change of clothes for the both of us (last time we flew DD had a nasty poop explosion everywhere!). I'm going to pack all DD's favorite non-toys that keep her way more occupied then her toys: water bottle, cell phone, tube of butt paste, mini candy packets, etc...
And, most importantly for me because I'm more worried about walking through the airport while juggling everything then the actual flight, we're planning on getting DH a pass to get through security so he can help me with all the stuff up to the gate. FIL told me all you do is ask when you check in and you shouldn't have a problem. He did it w/for elderly friends a few months ago.
CP 3/07 BFP 5/07 - Kylie born 2/08. BPF 2/09 - Alexandra born 10/09. TTC since 8/13 - diagnosed difficulty conceiving due to LP defect. Took vitamin B and Vitex Berry to help lengthen. BFP 2/14 - Missed M/C found at 8.5 weeks. D&C at 9w2d. Partial Molar Pregnancy. BFP 11/14
Let us know how it goes! I'm starting to stress over here, but I'll bet it will go much better then expected

Re: Good travel products
Healthy finger foods and a good variety of them: cheese ducks and animal crackers are Harm's faves.
A couple brand new little "carseat compatible" toys. One for the flight there and one for the flight back.
Baggies for your diaper bag.
Little cans of ready to eat formula (that way you don't have to worry about getting on the plane and than finding water if you use powder formula).

My mom told me the same thing. Though DH was wondering why I would "bother"...I told him he should fly alone with her!
You will be fine. Don't stress too much. Bring more ziploc baggies than you think you need. We used a back pack as our carry on.
Oh and ask the flight attendant for an empty cup. It kept DD busy for a while.
