It's been a long journey. TTC since 9/06. multiple IUI's and IVF's and 4 m/c's. IVF#3 = BFP, twins, induced at 34w6d due to baby b passing away (no explanation). Delivered on 35w1d, Baby A - baby girl, and Baby B - baby boy, our little angel.

I use Yams and Sweet Potatoes interchangeably.
I'm doing a casserole that includes mashed yams/sweet potatoes, ground walnuts, cream cheese, eggs, brandy - yummy! It ends up kind of like a souffle, but without the worry of a souffle. If it sounds interesting to you - let me know and I'll type out the recipe when I get home after lunch.

Me: Stage II endo, borderline high FSH
DH: perfect
1 lap, 5 IUIs = 4 BFNs and 1 c/p
2 IVFs, 2 FETs = 1 BFN, 1 c/p, 1 ectopic and finally a sticky BFP in May 2011!
1 FET in Aug 2013 = BFP!
This one is great!
2 lg. yams/sweet potatoes peeled and cut into 2" pieces
1/4 cup orange juice
2 Tbsp. brown sugar
2 Tbsp. maple syrup
1 Tbsp. butter or margerine
salt to taste
Me: 32 - Stage II Endo / DH: 36 - Low count and morphology (1%)
IUIs 1-3 BFN, lap Dec. 2010, IUIs 4-6 BFN
IVF w/ICSI #1 - ER 2/8: 24R 19M 9F ET 2/13 2-5 day blasts (no frosties) = BFP - b/g twins!

We like it really sweet:
2 1/2 lbs. sweet potatos-mashed
1/4 c butter
1 egg
3/4 c brown sugar
cinnamon
1/2 tsp vanilla
1 1/2 tsp salt
1/2 c choppped pecans
just put this together to taste.
After it has baked (30 mins) at 350--put marshmallows on top and bake again until they are turning golden brown.

Here's a recipe for a sweet potato-carrot puree that I've made several times. https://weheartthis.com/2009/11/16/for-the-thanksgiving-table-sweet-potato-and-carrot-puree/ It's equally good without the butter or you can use only a ractin of the amount called for. Also, instead of expensive, high calorie creme fraiche, I usee yogurt cheese (non fat plain yogurt that has been sieved so all the liquids are removed). I've also added a can of drained mandarin oranges or chopped pears.

SWEET POTATO CRANBERRY CASSEROLE

2 (17 oz.) cans yams, drained
2 c. whole cranberries, raw
TOPPING:
1/2 c. flour
1/2 c. brown sugar
1/2 c. quick oatmeal (raw)
1/3 c. soft butter
1 tsp. cinnamon
Heat, drain and mash canned yams (or use 3 cups freshly cooked and mashed yams). Add cranberries and mix in. Set aside.
Combine in bowl the flour, cinnamon, brown sugar and oatmeal; stir to blend. Cut in the soft butter. Add 1 cup of topping to yams and cranberries. Fold in.
Put mixture in casserole. Place remaining topping on top. Bake 350 degrees for 35 minutes. Spread 1 1/2 cups mini marshmallows on top and place under broiler to brown lightly.
