First, I really appreciate the information you have provided on culinary training.

DD will be graduating high school with her associates degree. She thinks she has a tentative plan for her education. She'd like to go to college and get a bachelor's degree in business or finance. Then she wants to get an associate's degree in culinary arts afterwards. Essentially, she will attend college for 4 years.

She really has her heart set on being a chef, but she'd like to keep her options open also. Is she hurting herself by not going with a longer culinary program? Does this seem like a smart route to take? 

I'd appreciate any input and thoughts.

    I think you answered everything. I saw some programs that were 36 or 39 months. It seems like the 2 year would be adequate then.

    I'm beginning to feel more confident in her path now. I think she is afraid of not loving it once she delves into it more. She is going to be helping out at a local bakery in my town just to test the waters. We will definitely encourage her to work in the field as much as she can while she is in college.

    I work as a sous chef and have an AAS in culinary arts. I guess I would ask her what her long-term career goals are. Does she hope to own her own business or get into management? 

    Also, has she looked in 4-yr culinary programs such as Johnson and Wales? My current intern is a student there and it seems like a decent program. The only drawback I have seen so far with J&W is that each "unit" (i.e baking and pastry) is a few days in length versus a few months with a tech school (I had 4 months of baking and pastry training. My intern studied for 6 days).

    Also, I second what Mollusk said about on-the-job training. One of my best cooks is self-taught.

    She does hope to own her own business one day. We come from a long line of business owners and it is in her blood;)

    We're only beginning to look into programs. The whole field is new to me and we are just trying to get our bearings.
