  • I tried to recreate the taco/burrito bowls.  Grilled chicken, black beans, brown rice, chopped tomatoes and cheese :)  Pretty good.

  • My husband is out of town, so we had Annie's Mac and cheese.  We ate lunch out, so neither one of us were very hungry.

  • We are having leftover BBQ from lunch. :) Fancy. DD has a show tonight, so she had to eat early and then we're eat later.

  • DD and DH had chicken tacos with diced tomatoes, avocado, beans and corn. I had one beef taco and decided saltines were a better choice.
    Hallelujah, it's a miracle, I have children AND a signature!

    That sounds great. How do you make the halibut?

    We were at a cookout, so I ate fried chicken, cheese ball, bruschetta, and sparkling water.  

    I baked it (400 for about 15 minutes), but you can also broil it or grill it.

  • Stuffed shells.  I finally realized they're not a pain to make....put the filling in a ziplock, snip the corner and squeeze it into the shells....duh.  They were awesome and I think they'll be a regular dish for us now.

  • I have been in a dinner rut lately and since DH had to work tonight. DS and I went down to my cousins bar with my parents and aunts/uncles for dinner. It was soo much fun.

    We had a munchie basket which had mozzarella stix, jalapeno poppers, hot chicken balls, fries, onion rings, fried mushrooms and shrimp on it. Then DS had grilled chicken strips and I had a grilled chicken salad. Soo yummy.

    That sounds good!

    I made chicken taquitos topped with shredded lettuce, cream and homemade guac. Also made the kids some red rice to go with theirs, like the kind they serve at Mexican restaurants.
