WFD?

I need inspiration.  I have pork chops, ground beef, chicken breasts that could be defrosted.  It is HOT. I don't want to cook and I don't want to eat.  I also don't want to cook, but I think the others in this house would like to eat tonight.  I'm not oppose to running to the store, but I still don't know what I'd eat.  Bring it on!
Hallelujah, it's a miracle, I have children AND a signature!

  • Thai Peanut Noodles:

    1 lb cooked shrimp. ( used raw) (You can do chicken instead)
    1 c. light italian dressing divided
    2 T crunchy peanut butter
    1 T soy sauce
    1 T honey
    1 tsp ground ginger ( I used fresh)
    1/4 tsp
    red pepper flakes
    1 carrot peeled and shredded
    1 c. green onions chopped
    1 T sesame oil
    8 oz. angel hair pasta, cooked
    2 T chopped cilantro
    2/3 c. peanuts chopped (optional)


    Marinate shrimp for 30 minutes in 1/2 c. salad dressing. Whisk together remaining 1/2 c. salad dressing with peanut butter, soy sauce
    honey, ginger and red pepper flakes until smooth. Set aside

    Saute carrots, green onions, and shrimp in sesame oil, until heated, about 5 minutes. Toss pasta shrimp mixture and peanut sauce in large bowl until mixed. Sprinkle with cilantro and peanuts.

    Serves 4

    Grilled marinated portabella mushrooms on fresh focaccia with farm stand tomato and lettuce, broccoli slaw (vinegar based), grilled potato/sweet potato wedges. My girls will be having turkey hot dogs instead of the mushrooms and broccoli instead of the slaw.

    Tomorrow night: Fresh garlic and herb pasta with pesto and chicken, farm stand green beans (likely stir fried)

    I raided the local farm stand today and pick up my CSA share tomorrow so meals will be featuring fresh local produce!

  • Our big meal of the day was lunch and I made baked dijon lime chicken, homemade garlic bread and green beans.  It was okay but the oven made the house too damn hot.  

    Dinner will be something that involves not turning on the oven.  I may go to JJ's or a local deli on my way to or from my church group.

  • Spaghetti. The kids have swimming until 6. I am just proud I planned something instead of take out which is what I would normally do on nights like this.

  • No clue. Probably these ham, spinach, cheese tortilla rollups I bought yesterday and am totally obsessed with. Who knows what DD will eat. DH is gone until Friday.

     BFP on Cycle 17 09/27/12. EDD 06/04/12! Please Stick Baby! A/S 01/22/13 Baby looking great. Officially TEAM BLUE! Jack is getting a Baby Brother! RCS scheduled for 05/29/13. William Daryll born at 9:59am on 05/29/13. Left ovary and tube removed due to peach sized tumor found during RCS. Pathology came back benign!

    omg, I was totally going to make this for dinner!  But the heat has made me rethink cooking anything in the house...it's either going to be burgers on the grill with chips and watermelon or a pizza

  • BBQ chicken, cornbread, and green beans.  I made the BBQ sauce and cornbread early this morning so I only have to grill the chicken and cook the green beans.

  • I had left over taco meat and beans so today I made a taco salad for myself an DH just had some soft tacos. It sufficed. It has been so hot here I haven't felt like cooking in a few days. I think tomorrow I am going to make a tortelloni, chicken and feta dish that I seen on pinterest.
