"Bring a dish"

I am going to a party on Saturday that requires me to bring a dish.  I would like to do something more creative than chips and salsa, but also not break the bank.  So far the best I have come up with are mini banana muffins (because I have 4 very ripe bananas).

 Any suggestions?  I don't want to be the person who takes home pretty much as much food as they brought with.  Oh, it's a BBQ, burgers and dogs are being served.

  • Brown Eyed Baker just posted a recipe for Banana Snack cake with a cream cheese frosting that looked super delish.  I would do that if you're wanting to use your bananas.  

    Other ideas: Potato, macaroni, or pasta salad, baked beans, a fruit or veggie platter, green salad, mac & cheese

  • I always take baked beans. The good kind with the copious amounts of brown sugar and bacon on the top.

    I would bring a simple cold pasta salad.  All you need are box of multicolored spiral pasta, cut up string cheese into circles, olives, red onions, diced cucumber and any italian dressing. Just mix everything in a bowl and voila! Goes grest with bbq and burgers.

  • For a BBQ, I usually like to bring something cool since it is summer and usually hot outside.

    This is my go to for parties. There is rarely any left. I actually make extra so I can have it at home. 

    I don't use the pimentos. I also use a red onion instead of yellow. I also end up using 3 whole bell peppers and just add another can of corn to balance it out. Also, make it the night before so it can marinate in the flavors. Beware this stuff is addicting...

  • I would make a rice salad, my favourite is an oriental rice salad. I like your mini muffin idea too!

  • I have one on Saturday too. I'm taking a cold pasta dish. Its an easy mince and toss. Green pepper, olives, onions, tomatoes, and fresh parsley. I toss with broken angel hair pasta that's been cooked with olive oil, shredded parm, and a little Italian dressing. You can make it up the night before. I will probably add chopped cucumber too since I have some on hand.

    I second this. I make it all the time and it's delicious, and always a huge hit! Also, it doesn't matter if it sits out a bit.

  • Thanks for all the replies.  I totally forgot about pasta salad!  I have everything in the house to make it too (if my 2 year old doesn't inhale all the pasta first).  I will probably make that, and I'm saving a bunch of these ideas to make for myself!

  • I have a awesome, simple pasta salad recipe that is a favorite in my family:

    caprese pasta salad:

    1lb bowtie noodles, 1lb fresh mozzarella balls (I get celigne), 1cup chopped basil, 1 lbs cherry or grape tomatoes, 1 cup extra virgin olive oil, s&P to taste, 3 garlic cloves finely minced (I prefer not using this and using garlic powder to taste) and red pepper flakes to taste.

    mix olive oil, s&p, red pepper flakes, garlic powder in a bowl, stir well.  Add tomatoes, mozzarella (I cut the moz balls in half, but you don't have to), basil and noodles and toss together. 

    You can serve room temp or cold.  Its delish!  Simple,  and people will ask you for the recipe!

    Guacamole ALWAYS gets 100% cleaned out when I take that, even if I make a motherload. Although, avocados aren't cheap, and you have to buy at least 5 or so when you make a larger batch of guac.
