I call my son Vincent, but occasionally 'Vince' slips out. I prefer both to 'Vinnie' personally, but I also have a great-uncle Vincent nn Vinnie so I know that it's perfectly acceptable.
Vincent Stephen seems fine to me, I don't see an issue with the pairing at all. I say do it!
ETA: I do prefer the traditional spelling of Stephen, but Steven is widely accepted as well. So either way is fine, I think.
