So I am going to a BBQ birthday dinner for my brother in law and I am in charge of a side dish! Well damn the luck the potato side dish was taken which is usually my staple so now I'm in charge of a veggie side dish. There will be 6 of us and I want to be more creative than steemed broccoli! Any ideas??? Non baby related I know but from the Monday meal posts you ladies seem to have some delishous sounding meals!
We just had a potluck at work and a coworker made "veggie bars." You mix cream cheese and dry ranch dressing mix and smear it on crescent rolls (keep them flat). Then, you chop up any veggies you want.....broccoli, pepper, carrots, etc...and add it on the top along with some mixed cheese. Everyone went crazy for them!

Try mixed veggies (frozen is fine) cauliflower, broccoli, carrots..preheat oven like 350, put veggies on foil covered pan, sprinkle with Parmesan cheese and some seasoning ( I've used red robin) cook til slightly brown. It's delicious.

Yes! Yum! My work makes a yummy version of this, it's spring melon salad, it's greens of your choice, [ I prefer all spinach] watermelon, feta, strawberries, chick peas, slivered almonds or cashews and optional is grilled sliced chicken, I prefer without. Dressing is a white balsamic vinegarette. It's amazing!

Broccoli salad...so good and easy but its best to make it at least a few hours before. I use cheddar cheese but here's the recipe:
Chop up fresh broccoli into bite sized pieces ( about 1-2 heads)
Mix in onions, broken up pieces of bacon ( I use veggie bacon), and shredded cheese
mix 2.5 tbs vinegar, 1 c mayo, and 1/3 c sugar
Toss dressing with everything else and let it soak in. Sooo good!
Grilled corn on the cob (clicky)
Apple and bacon coleslaw (clicky)
Cheese & herb stuffed mini peppers (clicky)
Cucumber salad
