They all sound very southern which is nice. Shelby immediately makes me think Steel Magnolias. Charlotte is a little more sophisticated. I prefer Charlotte.
I like Charlotte better than Shelby, but both are nice names. I feel like Elizabeth and Grace are both filler middle names and Grace is especially overdone.
Not a fan of either first name for the boys - both are super trendy and NMS. I like both Christopher and Seth.

Grayson sounds very trendy. I prefer Jackson.
haha, I immediately think of Steel Magnolias, too! But that's like my all-time favorite movie!
I actually prefer Shelby Grace and Charlotte Elizabeth.
I'm so over Charlotte and love the Southern appeal of Shelby. I prefer Jackson over Grayson, though I think are both wildly overused right now. I LOVE Seth.
I only get a Southern vibe from Shelby. Charlotte is much more cosmopolitan IMO. But paired with Grace, it feels a bit "safe." I like Charlotte Elizabeth a touch better simply because it avoids any stereotypes other than "classic and feminine."
Grayson and Jackson are so trendy I'd be afraid they'll be dated in ten years. But Jackson has the artsy vibe via Pollock. And shortened to Jack it can be traditional and shrug off any trendiness. Plus, I love the MN Seth.
So my vote is Charlotte Elizabeth and Jackson Seth.

I like Shelby Elizabeth Charlotte Grace is just so ordinary these days I feel even though its a pretty name. Its like Jennifer Anne of our generation I think..
DS is Jackson and I still love it. I am a bit surprised/disappointed that it has gotten so uberly popular over the last 5 yrs but I'm ok with it. For some reason I care more that my girls have uncommon names than boys..
Grayson is used on too many girls for my taste these days...

Charlotte Grace
Grayson Christopher.
Grayson and Jackson are both trendy right now. Charlotte is beautiful but very popular.
Charlotte Grace, so pretty.
Jackson Seth.

Lol, no I don't! Never seen it, haha....is that a character?
I like Charlotte and Jackson. Maybe a different middle name for Jackson
I like Jackson and Grayson but prefer Grayson.
I don't really like the girl names but Charlotte is the better of the two. It's not that they are terrible...just not my style.
Both boy names are suuuper trendy but if forced to pick, I'd go with Jackson...

Neither Grayson or Jackson are my style, sorry.

Shelby Elizabeth - I also thought of Steel Magnolias and that it sounds Southern
Charlotte Grace - blah, boring
Grayson Christopher - sounds like a prep
Jackson Seth - the first name is boring
