Quick dinners or crockpot

For those that are working, do you have any quick dinner recipes or crockpot recipes?

I've been struggling since going back to work. Normally my husband does ALL the cooking at my house and I do all the cleaning. But now that we're both working I've had to start cooking unless we want to eat at 9 pm. I get home at 4 or 4:30 and he doesn't get home until 7 or later most nights. Right now I feel like I get home with DD, feed her, put her in her bouncer and spend the rest of the evening in the kitchen. It's hard because after not being with her all day all I want to do is play with her or snuggle her. Cooking and cleaning is the last thing I want to be doing.

Hoping I can find some quick dinner recipes or crock pot recipes. It's hard to find good crockpot recipes for summertime. I really need to learn how to use the grill...

  • I've been looking up a lot of crock pot recipes on p interest. They just seem to be easier than other meals.

    We do a lot of sandwiches. Pinterest has a lot of ideas on variations of grilled cheese and other good sandwiches. My favorites are strawberries/spinach/feta and avocado/pesto/mozzerella/spinach and then I just stick them on the Foreman Grill to make. Then I serve with one of those bags of salad. We'll also do breakfast for dinner a lot. I make this quiche quite a bit -

    You can throw in whatever cheese or veggies you have on hand.

    And I agree with you about summer and the crock pot. But I think I'll have to accept that we might be eating beef stew and chili in the heat of summer because that's just what is going to work right now, lol.

  • Grilling is also quick and easy... And little clean up. I love chicken or pork loin in the crockpot with a marinade seasoning packet and water and then shred it for sandwiches. We also have a rice cooker... Its awesome. Instead of water we use beef broth, chicken broth, or coconut milk. We also sometimes add in corn. We also do lots of leftovers. SeptApril I work two jobs... We survive on leftovers.

  • Pulled pork sandwiches in the crock pot

    The other day I threw chicken breast, black beans, corn, canned tomatoes, jalepenos and taco seasoning in the crock pot then shredded the chicken and ate it on tortilla, it was yummy.

    Hot dogs/burgers are quick, and you could make a pasta salad ahead of time, on the weekend or something while baby is napping.

    Use a rotisserie chicken from the grocery store, you can make tons of stuff with it quickly.

    Frozen pizza, lasagna when you're really in a pinch

    I'm still on maternity leave, but I work 7p-7a, and leave at 615p and DH works 9-5, so we have very little time to get dinner together before I have to leave for work. We are used to quick meals with little clean ups on those nights.

    It was so hard with 1, I'm not looking forward to this whole dinner thing when I start work again and I have 2 kids, one of who will need to be fed right when I get home. :- 

  • All fantastic recommendations.. our solution has been to avoid spending every evening in the kitchen.  We cook in bulk on Sundays, then eat "leftovers" all week. Yes, it means essentially having the same dinner every night for 5 days, then switch the following week -- so what..? Most my friends think I'm crazy, and well, I think otherwise lol. We get to spend a lot more time together during the week with this routine.

    Our weekly meals are a mix - we'll do a lot of crockpot recipes, baked chickens with steamed veggies and rice/couscous, etc. Steamed brussel sprouts, green beans, asparagus, and peas have been a hit for us lately. 

    Some of my favorite chickens:

    "Salt" chicken - lay a bunch of bone-in pieces (we like drums) next to each other on a baking pan. Leave space on both sides or all four corners and pour little hills of sea salt (the big kind). We create pockets made of foil to avoid them touching the chicken. Bake uncovered on 400 for an hour. You won't taste the salt, but it creates a crunchy skin (which we peel & toss, but is delicious!) and melt-in-your-mouth meat.

    Simple chicken - line pan with sliced onion at the bottom, then some slices of potatos, then chicken (anything, we like thighs). Sprinkle with salt, pepper, paprika, garlic powder, then pour one cup of water. Bake uncovered on 400 for an hour and a half. Delish!

    Whole chicken in fresh spices - stuff a whole chicken with two lemon halves & a couple rosemary branches. Chop fresh rosemary, parsley, thyme (and/or any others you like), mix with minced garlic. Rub the outside of the chicken (in between skin and meat) with a little salt & pepper, then spread spice mixture as well. Bake on 400 for 1.5 hours.

    Any marinated chicken is nice as a meal.

    I also have some middle eastern spices (I'm Israeli) that go great with chicken and plums, olive oil for a marinade, etc.

  • We are not big crockpot people but we both really liked this recipe.  I doubled everything except the chicken and the butter and it was really good with lots of sauce.  I also subbed Rondele spreadable garlic and herb cheese for the cream cheese just because I saw someone in the comments did that and it sounded good :)
