I need to start cooking more, but the problem is that I am a terrible cook! That and I hardly know how to make anything. I try to follow recepies, but so far my apatite far outweighs my abilities.
We're having chicken jambalaya. It's cubed chicken in Cajun seasoning, sliced sausage links, and chopped red onion, pepper, and tomato cooked together and served over rice. Yummy!

I thought I'd be brave and make a 3-ingredient meal last night... LO thought he had better ideas. I was successful in the end, but not without many breaks for BFing and calming a fussy baby, lol. It kind of discouraged me for now
Tacos! My DH works from 3 pm to 11 pm so we usually eat a bigger meal around 12 pm and he takes leftovers in his lunch. We missed lunch today so I'll be trying to make dinner alone while he is at work. At least it's an easy one! LOL
A banana and a coconut pineapple yogurt balanced with a spoonful of peanut butter for a dose of protein and because I had to get the banana taste gone (not a huge fan unless it's banana bread or in cereal, apparently)
I work at the library tonight, and today DH went into the office (so he doesn't get home til 8:30), so my mom, DD and I went out for a meal around 3. I had a turkey sandwich, yam chips, and black bean soup. And cheesecake for dessert. <img src
Its just me and the kids for dinner each night, H wouldn't eat this cuz there's no meat in it, but we had teriyaki stir fry on quinoa and steamed squash.
