I love soup in the winter but get overwhelmed w/ all the recipes out there. We don't eat cream based soups either so that rules some out...
Some of our favorites are tortellini soup (w/ tomatoes & spinach), taco/tortilla soup & corn chowder... Anyone have other soup recipes to share? Even better if kids will eat it .

This is one of my favorite winter soups. Leeks, potatoes, sweet potato, yum! And so easy (I don't bother with the little gruyere toasts/croutons things).

Another amazing soup. A little prep to chop everything but other than that it is super easy. And the pistou is amazing. The recipe for the pistou makes more than what is called for in the soup. The extra makes a really good start for a sauce for pasta (I just cut it with a little of the pasta water).

butternut squash:
1/4 c EVOO
chopped onion
butt squash peeled and cut into 1" pieces
cook together until squash is starting to get tender. Then add:
~ 4 c broth (I use veggie) to cover and simmer until squash is soft enough to puree with a hand blender or in a blender. Season with salt and pepper to taste (can also add fresh herbs).
Let it cool slightly, puree. Serve with crusty bread and crumbled goat cheese. Super healthy, yummy and easy!
This one is easy and pretty good. My boys eat the pasta and chicken.

pea soup.
1 onion (chopped)
1 bag of peas (frozen or fresh)
2 medium carrots (chopped
2 heaping tablespoons of miso or whatever stock you like to use
1 handful of fresh mint chopped (optional)
1 cup of pea shoots chopped (optional)
Heat olive oil in a pot and add onion and carrots. Cook, stirring until they are soft. Add peas and mint and pea shoots (if you are using them), Cook for 3-5 minutes over a medium flame. Add 1 cup of boiled water and half of your stock. Continue cooking for 4 minutes then add rest of stock and water. Let it simmer for no more than 5 minutes. Transfer the entire pot to a food processor or use a hand blender. Blend until smooth, salt and pepper to taste.
Serve with warm crusty bread and olive oil.
