recipes for eggplant

Anyone have any good eggplant recipes? I've never cooked with it before. If possible, I'd love a recipe that would be good for LO to eat too. She usually just eats what we have for dinner. TIA!

    I LOVE eggplant parmigana (sp?)

    Slice the eggplant, coat the pieces in batter (I dip it in egg first), fry it in a skillet, then put it in a baking pan & pour spaghetti sauce/mozz. cheese over it and bake. Serve with spaghetti :) YUM! :)
