Well since we aren't going out to dinner for shepherds pie I am making provolone stuffed flank steak (dh's has portabellos in it too). Don't be too impressed, they came from the grocery store, all I have to do is put it in the oven! Plus baked taters and veggies.

I just use boneless skinless chicken breasts, and then serve over any kind of pasta you like.
Prep Time: 10 minutes Cook Time: 8 hours on LOW or 4 hours on HIGH
You Will Need 2 ? lbs. chicken parts 1 pkg. (8 oz.) fresh mushrooms, halved or sliced 1 pkg. McCormick? Slow Cooker Italian Herb Chicken Seasoning 2 cans (14 ? oz. each) stewed tomatoes, undrained 1 can (6 oz.) tomato paste
PLACE chicken and mushrooms in slow cooker.
MIX Seasoning, tomatoes, and tomato paste until blended. Pour over chicken and mushrooms. Cover.
COOK 8 hours on LOW or 4 hours on HIGH. Remove chicken and vegetables to serving platter. Stir sauce before serving.

The other slow cooker McCormick ones that are really good are The BBQ pulled pork and the Stroganoff.
I love the pulled pork one we do it all the time. And I love the HOT Chili mix I make it with steak cut into tiny cubes instead of burger though its amazing
I had my standard go-to dinner when I want something healthy but don't want to do much work for it:
Tilapia fillet (we always have a bag of frozen fillets from Sam's on hand) with Emeril's Fish Rub, a baked sweet potato, and peas. Oh, and a Sam Adams....it's been one of those days.

Crockpot French Dip Roast....i got the recipe from D is for Dinner blog...I tried one of her recipes last night and i'm sold
I made the creamy chicken pasta last night. It was super easy and AWESOME!!!
Hopefully the french dip is just as good, smells amazing!
