We are supposed to bring in cookies for daycare on Monday. Everyone is supposed to bring in 3 dozen, and the teachers all get bags and fill them with cookies. I was going to just make chocolate chip, but I am on maternity leave and have a little more free time. Anyone know of any good recipes?
If you want to send something not-too-sweet, these Italian Cookies are unbelievable. I made them a couple weeks ago because I had leftover ricotta in the fridge. They were even great without the frosting.
I am giving everyone coconut maccaroons this year. They have a decent shelf life and ship well. I did a trial run with my office and DH's office and they were a big hit.

Thank goodness my daycare is not demanding 3 dozen cookies! I don't know how I would fit that into the weekend, which probably makes me disorganized & inefficient...but hey, I'm doing my best.
Well, too little too late but these are to die for. They are sweet but the sweetness comes from the filling (I'd make a double batch of those) and the cookies themselves are very light and flaky.
