Meal Planning Monday

We were out of town all weekend so I'm behind on my grocery shopping and meal planning.  I need ideas, ladies, so share your plans!

The only meals I'm tentatively planning based on what I have at home are: 

Monday:  Ham and cheese omelettes, fresh fruit, mixed greens.

Tuesday:  Black bean, white onion, and green pepper tacos.

    M: smoked mozz and tomato meatloaf, leftover pasta salad

    T: chicken stir fry of some sort over fried rice

    W: one of our many potlucks

    Th: if we have any leftovers we will use those up before a family weekend, otherwise grilled Jamaican rum chicken and a grilled loaded potatoes

    F: eating with family but not sure what or where
  • Monday - grilled chicken sausage and summer squash, side of rice

    Tuesday - Pesto pasta with artichokes, tomatoes and olives.

    Wednesday - pan fried salmon with a farm share veggie side (TBD)

    Thursday - mediterranean orzo salad with black beans and salmon

    Friday - leftovers

  • Monday: Southwestern Chicken salads

    Tuesday: Beans and rice casserole

    Wednesday: Steak Fajitas

    Thursday:  Spicy beans and bread

    Friday: grilled balsamic pork chops with zucchini and summer squash and potatos

  • Monday: BBQ at my sister's house
    Tuesday: Beer can chicken, kale, avocado and bean salad
    Wednesday: Parmesan tilapia, wild rice, roasted broccoli
    Thursday: Zucchini and sausage lasagna, mixed green salad
    Friday to Sunday: no idea yet

    Mmmmm, you all have some good stuff planned!nbsp; AA, how do you make your grilled Jamaican rum chicken?

    Chicken breasts with a bit of olive or grapeseed oil [just a little drizzle over the chicken to help the seasoning stick amd soak in better], a decent amount of seasoning on each side and patted in [I use Cabela's Open Season Jamaican Island Rum Seasoning but I would guess actual grocery stores would have something similar or Cabela's probably sells it online], and probably 2 shots or so per 3 breasts of Ron Diaz spiced rum [Captain Morgan would work too] poured over the top then left to marinate a while before grilling.
  • I started typing and realized that my meal plan this week is extremely similar to last week's, and that made me sad and slightly embarrassed. Poor DH and DD, how boring. I pledge to be more creative next week!

  • Pesto chicken and tomato kebabs

    Sausage, potatoes, and summer veggies skillet

    Dijon pork chops and rice pilaf

    Italian chicken and caprese salad

    Picadillo over rice with corn tortillas
