Anyone eat this stuff regularly? Any good suggestions on how to make it/eat it?
My dad (Mr. Super Green Thumb) brought over 2 big bunches of bok choy and I have no idea what to do with them.
I've looked into a few recipes, but nothing sounds "spot on".
Suggestions are greatly appreciated! I'd hate for this stuff to go to waste but he really is over exaggerated and gave me way too much

DH loves sauteeing with some oil, garlic, and salt.
I've made it by bring a pot of water to a boil with some oil drizzled in it. It's sorta like deep frying, but also boiling. boil for a few minutes, and add salt if desired. I just eat it like that though.
oh, and these:
gingered kale and bok choy
I second the stir fry idea. I also like it saute'd w/ fresh garlic in olive oil. Although I usually add hot peppers too!
You can always blanch some of it to freeze and use later. I do this with a lot of my greens from the garden.
