If I had a bigger freezer I would, but it looks like I'll be stuck cooking PP. My fianc? hates cooking, and sometimes even complains that microwaving food is too much effort. I plan on making a lot of slow cooker meals and trying to find some one pot recipes.
Im due feb 21 and started making freeze ahead meals last weekend. Fortunately we have a deep freeze in the basement so we have lots of room.
Up on the menu is baked spaghetti, easy enchiladas, poppy seed chicken casserole, chicken spinach and pasta bake (found on pinterest), chicken Alfredo bake, chicken crunch casserole, cheesy hamburger casserole (found on pinterest - just like hamburger helper but better and you know what goes in it!), and I'm preparing the meat for about 4 different crock pot recipes. I have the cans, packed them in boxes with the recipie and stuck them on the floor next to the deep freeze.
My husband doesn't mind cooking, but this really makes it easy. I did this when we had our first kid and we didn't have to think about dinner ps for almost 3 months.
I've pinned a bunch of stuff. We're on a low carb diet (due to GD, but we're planning on keeping it up for awhile) so some of these are a little less noodley and starchy than you sometimes find. Feel free to add me!
We don't have a lot of freezer space either. Regardless, I'm sure we'll try to freeze at least a few meals when we get a little closer. Fortunately my husband is the cook of our family for the most part so that is definitely a bonus! Also, we live in CA and both of our families live back east in NH, so when they come out for the birth in April they've expressed they will be happy to help out however possible. :)

I just did this today. I made 7 different dishes that, some, are broken up into two meals. I'm EXHAUSTED. I'm about to jump into the shower and call it a day.
chicken mac and cheese
chicken pot pie
a tomato sauce
Plus my DH's friend came over today, and made us lasagna tonight, and another one that he put in the freezer for later.
I figure throw in a pizza or chinese takeout every once in a while, and I'm set for a bit.
With DD#2, I came home from the hospital and had to cook that night, because DH was sick with a stomach bug. I don't want to have to cook a meal when I get home this time too.
