So... this is the first time in 35 years that I won't be at my parents' house on Christmas Day. (F and I are headed there the day after to celebrate). I realize I don't really have a plan for what to cook for that eve. I feel like I want to keep it simple and not too pricy. I know I'm going to have some donuts or cinnamon rolls and coffee in the early morn and breakfast casserole with cranberry orange English muffins for brunch. I don't want to spend my day cooking after opening presents, but I want to have something special to eat. It will just be DH, F and me. I grew up eating either beef tenderloin, ham or seafood casserole on Christmas. Any suggestions?
