My husband and I want to give our baby both our last names.
So..how do I legally do this?? Do I put mine first then his, OR, his then mine?
Do I hyphenate the name?

There's no legal guideline, whatever you put on the birth certificate will be the baby's legal name.
You can do any of the above, there really is no standard way, it's up to you and your DH.
I am sure it's up to you.
If it were me I would pick which ever order sounded the most pleasing to the ear and I would probably hyphenate so that it would be apparent that the child had two last names, and not two middle names.

Yep, you can do whatever you like. Here are some variations I have seen among my friends and family:
1. Mom's surname as MN, Dad's as LN
2. Dad's surname as MN, Mom's as LN
3. Hyphenated LN: Mom-Dad
4. Hyphenated LN: Dad-Mom
5. a new LN made by smooshing Mom's and Dad's (or Mom's and Mom's, or Dad's and Dad's) (ex: Rodriguez and Whitman = Rodman)
6. a new LN made out of letters from Mom's and Dad's (ex: Smith and Anders = Mathers)
7. everyone in the family took a new last name that had meaning for them
Really, anything goes, as long as you are comfortable with it.

My twins have my last name as their second middle name. Its there if they want to use but they officially have his last name. Although our friends call our family the "hislastname-mylastname's"
I think if you are going to hypenate, traditionally it is done Father-Mother's last names (at least in the Hispanic Culture, then at marriage, females generally drop Mother's last name and add their Husband's last name) - but obviously that comes from a male dominated tradition.
I personally kepy my last name and did not take or add DH's last name when I got married. I was married previously and did hyphenate and it was a huge pain in my ass. We gave DD just DH's last name.
I think you can do it any way you like.
I have two middle names-- one that is a real middle name and one that is my mom's last name. Then my dad's last name as my last name. THis is what we will do for our child as well.
As a woman with a hyphenated last name- please don't do this to your child. It is a PITA for ALL paperwork. Many systems can't process hyphens OR spaces for last names, so when I call companies I always have to remember "Now was it hyphenated... or one word? Was there a space? Did I just use my husband's last name so I didn't have to deal with it?"
I agree with two middle names if you must go that route.

8/2013- HSG. DX- Right Tube completely blocked. Elevated TPO and TSH. DX- Hashimoto's Thyroiditis
DH's SA= good count, poor motility (39%) and morphology (4%). Adding Fertiliaid for Men and CoQ10
