Meal Plan Monday

What's some of the difficulties that you've had starting out meal planning? I've noticed that sometimes if we don't follow the plan one day, the rest of the week gets derailed. That's kind of what happened to us last week, but we did still manage to not eat out much. I'm going to start re-posting what my meal plan was for the previous week and what we ended up eating too. I think it'll be an interesting comparison.

Last week:

Mon- Pot stickers, asian veg, rice

Tue-  Leftovers

Wed- Cranberry chicken with asparagus (actual: creamy tomato parmesan pasta)

Thu-  Shrimp fried rice (actual: lemon glazed chicken)

Fri- Cauliflower crust pizzas (actual: leftovers/breakfast for dinner)

Sat- Apple cider chicken with carrots (actual: out with parents)

Sun- Fish tacos (actual: cranberry chicken and asparagus)


This week:

Mon- Hamburgers with sweet potato fries

Tue-  Leftovers

Wed- Cranberry stuffed pork loin with asparagus

Thu- Teriyaki chicken bowls

Fri- Turkey bolognese

Sat- Beef & broccoli with rice

Sun- Breakfast sandwiches with breakfast potatoes

  • I have 5 work days left until my maternity leave starts and I'm dying of the slow drawndown, so I'll contribute this week in the hopes of finding some good freezer meals.  Last week was a complete flop since we were between visits with my parents.  Our plan for this week is:

    Monday - German sausages, potatoes, sauerkraut
    Tuesday - Shrimp tacos a la mexicana (rick bayless recipe, basically shrimp with avocado, tomato and onion)
    Wednesday - Marinated Venison with mashed potatoes
    Thursday - Gnocchi with pasta sauce (Costco has a great deal on Victoria sauce right now!)
    Friday - Something with chicken, probably roast chicken or Roasted Red Pepper Pesto (DS/DH loved it!)
    Saturday - I think we're going out to dinner?
    Sunday - Extended family dinner so likely takeout


    Since I didn't contribute before, some of our hits have been beef stew, beef stroganoff, Pioneer Woman Chicken Spaghetti, and Simply Recipes Shrimp with Tomato and Feta.

  • Is it bad that I haven't thought past tonight? And even with that all I've got it chicken something. :-/

  • tonight: apple cider rubbed pork chops/rice/veggie

    tomorrow: Michael Symons Bacon Corn Cavaltelli but I add chicken...def not healthy but sometimes you need a delicious easy meal

    Wednesday: salad with grilled chicken

    Thursday: Pork shoulder chili

    Friday: hot dogs

    Sat: my inlaws are smoking something (meat not the funny stuff)

    Sunday: leftovers

  • I had a horrendous weekend, so I don't even know past tonight, which is quick chili and cornbread.

    Tuesday: leftovers
    Wednesday: sausage and sweet pepper bow tie pasta, applesauce
    Thursday: dinner at my mom's
    Friday: chicken quesadillas, rice
    PCOS with long, irregular cycles
    First round of Clomid in May 2012= BFP #1, DD born January 2013 
    BFP #2 in January 2014, DS born September 2014

  • My biggest problem is motivating myself to prep things the night before. It makes things so much easier to just have to throw things together when I get home from work and not have to deal with washing and choppin stuff. But at the end of the day I'm so tired that I just want to sit down and relax. :-p

    This week's meals:

    Yesterday: Vegetarian lentil loaf, Dijon braised Brussels sprouts and garlic and cheese mashed cauliflower (I was feeling ambitious. It took like 2 1/2 hours to make!)

    Today: roasted zucchini, yellow squash, mushrooms and red peppers over penne

    Tomorrow: vegetable barley soup

    Wednesday: dinner at my parents - spinach stuffed tilapia

    Thursday: white bean and fennel soup (moment of truth: will DD retain her bizarre and surprising love of fennel??)

    Friday: Indian takeout

    Wednesday tacos
    Thursday chicken pot pie
    Friday pasta fagiole

    Wednesday: Marinated Chicken w/Pasta Roni and Veggies

    Thursday: Spaghetti w/homemade meat sauce, garlic bread, and salad

    Funeral potatoes are a cheesy potato dish that you can just throw in the crock pot in the morning and they are ready by dinner time.  Here is the recipe I use.

    1 (32-ounce) package frozen shredded hash browns, thawed
    2 cups shredded sharp Cheddar cheese
    1 - 2 cans of Campbell's Cream of Potato (depends on how thick/watery you want your dish)
    2 cups sour cream salt and pepper


    I also slice up green onions and throw them in.  I also sprinkle more cheese on the top of the mixed up potato stuff after I have it in the crock pot.  Cook on low all day or on high for 4 hours.  Some people sprinkle crunchy stuff on the top, you can search google for tons of varieties.  Seems like everyone kind of has their own recipe.  My boys love them (cheese).

  • I'm late to the game, but I am so excited that this is a thing!!! Here is the rest of the week for us, I have been trying to make lots of meals that freeze well so we will have the leftovers when my lady parts feel like they have been blown open from the inside:

    W: BBQ pulled pork, mashed sweet potatoes and green beans sautéed in garlic and oil
    T: Taco Soup
    F: shrimp fajitas and fiesta line rice (basically just brown rice with lime juice, tomatoes, avocado and scallions)
    S: eggplant and chicken parm because I might as well take advantage of my very Italian father staying with us and because eggplant is supposed to induce labor.

    No plans for Sunday because the eggplant is supposed to induce labor soooo I will be busy ;)
