Yesterday: Vegetarian lentil loaf, Dijon braised Brussels sprouts and garlic and cheese mashed cauliflower (I was feeling ambitious. It took like 2 1/2 hours to make!)
Today: roasted zucchini, yellow squash, mushrooms and red peppers over penne
Tomorrow: vegetable barley soup
Wednesday: dinner at my parents - spinach stuffed tilapia
Thursday: white bean and fennel soup (moment of truth: will DD retain her bizarre and surprising love of fennel??)

Okay, I finally got my ish together:
Tonight: Bacon Chicken and Dumplings
Wednesday: Marinated Chicken w/Pasta Roni and Veggies
Thursday: Spaghetti w/homemade meat sauce, garlic bread, and salad
Funeral potatoes are a cheesy potato dish that you can just throw in the crock pot in the morning and they are ready by dinner time. Here is the recipe I use.
2 cups shredded sharp Cheddar cheese
1 - 2 cans of Campbell's Cream of Potato (depends on how thick/watery you want your dish)
2 cups sour cream salt and pepper
I also slice up green onions and throw them in. I also sprinkle more cheese on the top of the mixed up potato stuff after I have it in the crock pot. Cook on low all day or on high for 4 hours. Some people sprinkle crunchy stuff on the top, you can search google for tons of varieties. Seems like everyone kind of has their own recipe. My boys love them (cheese).

S: eggplant and chicken parm because I might as well take advantage of my very Italian father staying with us and because eggplant is supposed to induce labor.
