GTKY Tuesday!

Because I'm bored, hungry and pumping so can't go get food, I figured, why not make it worse?

I'm having a pot-luck party and you're all invited, the theme is signature dish.
What do you bring?


I've made a start on the dessert table with my seasonal speciality - caramel apple crumble.

    Hmm...my main dish would be my honey garlic pork tenderloin.

    But I'm huge on desserts, so I'd also bring a lemon blueberry trifle.

    I want the pork tenderloin too. To save time, assume that (if it doesn't have mushrooms) I want to eat all the things.

  • I'm always the fruit or veggie lady. I realize summer is almost over, but I didn't get enough of this dish so watermelon and mint it is.

    If I needed to bring a more substantial side I'd bring my green beans with herbed dressing or a fresh mozzarella, tomato, basil, olive oil and red wine vinegar salad.

    Now I'm hungry.

    Sure! (And it's SUPER easy too)

    1pkg pork tenderloin (2-2.5 lbs)
    4 garlic cloves (quartered and slivered)
    1/4 cup soy sauce
    2 Tbsp whole grain mustard
    4 Tbsp Honey
    2 Tbsp Orange Juice
    1 Tbsp Finely Chopped Rosemary
    3 Tbsp Olive Oil

    Preheat oven to 350.
    Spray 9x13 baking dish with non-stick spray and place tenderloins inside.
    Use a knife to poke holes in the tenderloin and place garlic slivers inside.
    Mix remaining ingredients (add Olive Oil last) and pour marinade over tenderloins.
    Bake uncovered for about 45 minutes, basting once halfway through cooking.
    Let pork rest 10 minutes, then enjoy!

    Feta Avocado Salsa! 

    SO good with nacho chips, in wraps, on crustini bread!
    Ingredients 2 plum tomatoes, chopped
    1 ripe avocado - peeled, pitted and chopped
    1/2 can corn niblets
    1/2-3/4 can of black beans (drained and dried)
    1/4 cup finely chopped red onion
    1 clove garlic, mince
    1 tablespoon snipped fresh parsley
    1 tablespoon chopped fresh oregano
    1 tablespoon olive oil
    1 tablespoon red or white wine vinegar
    4 ounces crumbled feta cheese
    Directions 1.In a bowl, gently stir together tomatoes, avocados, beans, corn, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for 2 to 6 hours.

  • Homemade enchiladas. I make the sauce from scratch with tomatoes and peppers, even use queso fresco. Too authentic and delicious to pass up.

    For a dessert I'd bring the "chocolate icebox" it's this heavenly dessert that uses Ritz crackers and butter to form a crust and has chocolate pudding, chocolate ice cream, and cool whip.

    All these foods are making this dieting woman want ALL the foods!

    Then for dessert, I'll make my cherry cheesecake brownies :D

    And I'll also bring tums, gas-x and some Oompa Loompas to rolls us out of this party!

  • I still haven't had breakfast. MiniMe woke up and needed changing and now she's eating all the things and I'm not coordinated enough to feed her and make breakfast. I can hear the pumpkin bagels screaming at me from the kitchen :(

  • @msuducks I need that green been casserole recipe! I hate the canned mushroom nasty soup crap and never eat it because of that, but maybe with some yummy parmesan cream sauce it'll be a different story!

    @darkangel42 I had the pumpkin spice bagel for breakfast. They are pretty good, but could be more pumpkin-y

  • My Mom's fruit salad is what I always make to take somewhere.


    1 can of pineapple chunks in juice
    1 can of mandarin oranges in juice
    1 can sliced peaches in juice
    1 can of pie filling (my mom makes it with cherry but my DH loves it with strawberry)
    1 medium apple of your choice (I used whatever I have on hand which is granny smith)

    Drain pineapple, oranges, and peaches.
    Cut apple and peaches to bite sized pieces.
    Pour into a bowl and mix in pie filling. 
    Refrigerate.  
    Enjoy.

  • I don't have a signature dish because I like to try different things out for potlucks (let everyone else be my guinea pigs), but I made some bourbon meatballs that were a hit, so let's do that since I know they'll turn out good.


  • And hold up....no one has mentioned beverages!!!! If we were to all get together with all this food, you KNOW we would need some.

    I'd make some pineapple rum punch or some margaritas with some yummy reposado tequila.

  • On the subject of drinks then, I'll do apple ginger and lemon ginger mocktails.

    it's 50-50 lemonade or apple juice and ginger ale. With or without some muddled mint leaves, depending on your preference.
  • My #1 requested item is a red wine sangria. After that my signature side dish is fresh caprese salad. Signature main dish is enchiladas.

    Well, my pasta is something I just made up one day so there's no real detailed instructions but,

    Heat up some oil or butter in a pan, then mince some onions and garlic in a pan. Put the garlic and onions in the pan and let those cook a bit. Don't let the garlic burn!!! Then, add maybe a couple of spoonfuls of capers and let those cook a bit. Then add white wine. The more you add, the more sauce you'll get. Let that cook to a boil then add maybe a cap full or a couple of squirts of lemon juice. Not too much or it'll be really sour. Then, add salt and pepper to taste and if you wanted, you can add any other seasoning like Rosemary or basil. But that's up to you. You could also cook chicken or spinach or fish or shell fish or whatever in with the garlic and onions to add to the dish.

    The paninis-

    Buy or make some pesto and marinate the portobellos in it for at least 2 hours. Then, if the Gorgonzola isn't spreadable, add a little milk to it in a sauce pan and loosen it up. It should be creamy and spreadable. Now, if you have a grill or panini maker or a pan and something heavy, take some rye bread and spread the Gorgonzola on both sides (or how ever much you think you'd like) then, place a portobello on one slice and add some pesto on top if you want. Then, add some sun dried tomatoes and if you want, a mozzarella cheese slice. Then put the second piece of bread on top and grill it. If you don't have a grill or panini maker, put the sandwich in a pan and place something heavy on top of it to smash it. Make sure the bread is toasted. Then you've got a panini!

    Brownies- buy some brownie mix lol and make some cheesecake batter (Kraft has a recipe on their site). Pour the brownie batter into a buttered or sprayed pan and make sure you get the air bubbles out. Then, put some cheesecake batter on top of the brownie mix. You can plop it or or spread it on. Then, with a tooth pick or knife or whatever, swirl the two batters together lightly on top. Try and keep the cheesecake part on top of the brownie batter. Bake that according to the brownie instructions and then when it's cooked and still in the pan, pour cherry pie filling on top of it. Or take it out of the pan and scoop it on top.

    Croissants (ok, well they're actually crescent rolls lol)-

    Mix some Nutella (or jif spread) or any flavor you like with some softened cream cheese. Then, take some pillsbury crescent rolls and spread them out according to the directions. Then, scoop the cream cheese mixture onto the wider end of the crescent roll. Then, fold the crescent wrap up making sure the filling is completely covered. It's ok if some oozes out though. Then bake according to the pillsbury directions.

    :D and then feast as if no one has ever feasted before!
  • I cant really cook. So I will bring plates and silverwear cups and napkins. And some lawn games like ladder golf and bocci ball and kan jam hope you all still let me in to eat all the foods.

  • @Matthew930‌ arroz con gandules is one of my favorite dishes! I always ask my dad to make it when we have dinner at his house! I'm going to have to try and make it myself one of these days. Now I want to eat some with some shredded beef and plantains. So much deliciousness!!

    crockpot caramel cider is happening though! Next time I do caramel apple crumble, we shall have all things caramel apple.

    What was in the butter beer recipe you used before? I found something with just cream soda and caramel. That didn't seem legit.
  • It called for cream soda, butterscotch, vanilla, cream and some other stuff but it just separated out because cream and soda don't mix.
