Bake a chicken breast or two in salsa, or cook however you want with some Mexican-y spices. Then chop cooked chicken into small pieces (I usually make 2-3 at time so I have the fixins ready for another night).
Take a tortilla and spread it with hummus. Pile chopped chicken, tomatoes, red onion and shredded cheese on top. Bake for 10-15 minutes at 375ish (until toasty brown on top and edges are crisp). It ends up being like a messy healthy pizza. You can vary the ingredients- sometimes I add beans if I have them, chopped cilantro or avocado, etc.
DH loves this one. I use boneless skinless chicken breasts and don't bake it for as long. I also have added a couple tablespoons of chicken stock to the sauce because it gets quite thick in the oven.
Smitten Kitchen's Tarte Tatin. Now that it's fall and apples are abundant, this recipe is a great dessert. Served warm with vanilla ice cream. My only modification to this recipe is that I sliced the apples thinner than quarters (in 8ths usually).
Excluding the water, you only need 4 ingredients (butter, apples, flour, sugar).

Preheat oven to 350. Beat eggs, add flour, baking powder, salt, cottage and jack cheese, butter and blend until smooth. Stir in chiles. Butter a 9x13" baking pan and pour mixture in. Bake for 35 mins or until golden brown on top.
**We can take one square right out of the freezer in the morning and nuke on 50% power for 1 1/2 mins, flip and do another 1-1 1/2 mins. Good with fruit.
This is a huge hit with Madeline as well as my 7yo niece and 5yo nephew. H and I really enjoyed it too, so it was a great alternative to basic kid friendly Mac and cheeses, especially with the addition of the broccoli sneaking veggies into those unsuspecting kids! DH and I had this for dinner tonight - it was pretty amazing. DH doesn't normally like broccoli, and LO didn't like alfredo last time we had it, but everybody scarfed it down tonight!
I had to use up a ton of broccoli, so I made this cream of broccoli soup. It was a huge hit. I only blended about half of it, but left the rest a little chunky.
Edits for more info: The proportions in this recipe felt weird to me - I used 2 cups broth, 1 cup water, and a 12 ounce package of broccoli florets (along with the 2 onion and 1 celery stalk). This needs more cooking than the recipe calls for, more than twice as long. I added a dash of nutmeg, which I add to all creamy soups and sauces. I also added salt, which is oddly missing from the recipe.
Add chocolate mini chips instead of blueberries and use 4 very ripe 6 in bananas (which is more than the recipe calls for). Also, recipe says you can make 15, I used every drop of batter to make 12.

Crock Pot Mexican Stuffed Bell Peppers. My meat went bad and I was already in the middle of making this when I realized it . So I subbed a can of black beans and added corn and it was a delicious meatless meal! IM sure it would taste good with meat too though.
Cuban Pork Roast. I've made variations of this recipe many times. It's an easy one for the crock pot. One thing you have to do though is to let it sit in the marinade for at least 12 hours (I usually have it in there for a day or a day and a half) before cooking.

It took longer to get the pasta done than it said in the recipe - I think closer to 25 minutes. I also had to add more liqiquid as it was cooking because the sauce was getting too thick I would guess I added another 1/3 cup of broth overall.
Pumpkin Pie French Toast. Really good the day of - not as fabulous re-heated (but I am a little picky about re-heated food - so take that with a grain of salt)
Lessons learned: have all your ingredients ready for the Alfredo sauce, include a clove of garlic when you boil your pasta (along with salt and a bit of evoo, so the noodles don't stick), and this is a very messy prep so beat save it for a night when you have assistance washing dishes
Was looking for something simple to make with the limited groceries I had in the house (roads are treacherous and I did not want to drive to town on the ice for food...). It turned out reall well. I added some celery and carrots with the onion and then a few handfuls of spinach at the end.

We had a toboggan party today and I made a Hot Cranberry Spiced Punch as well as Hot Chocolate in a couple crockpots. Both were amazing so I thought I'd post the recipes here. The hot chocolate was pretty rich. It was delicious, but if you prefer it a little less chocolatey I'd recommend adding a little more milk.

Willman's fried meatballs
Ground beef
Ground pork
1 shredded carrot
1/2 bag of spinach, cooked and chopped
Worcestershire sauce
Garlic, Parsley, oregano, and pepper

Plain bread crumbs
Smush all in a bowl, roll into balls, and fry in 1/4 in sunflower oil for about 8 minutes, turning them to brown on all sides.
The best thing is you can make all the balls and freeze what you don't make. Just go from frozen to the pan for a quick meal.
