Meal Planning Monday! (08/25/14)

So, what is for dinner this week?  Anyone else struggling to figure out quick and easy dinners (that don't require being on your feet a good bit)?

    Sunday:  Roasted Chicken, Chicken Gravy, Corn, and Broccoli.
    Monday:  Chicken Enchiladas (using left over chicken from Sunday).  
    Tuesday:  Smoked Sausage with German potato salad and sweet and sour red cabbage
    Wednesday:  Beef and Barley Casserole
    Thursday:  BBQ chicken salad (for me)/sandwhich (for DH) - again using left over chicken from Sunday.  We bought a really big chicken.

    Tuesday: Chicken & Green Bean Stir Fry
    Wedesday: Macaroni & Cheese
    Thursday: Tacos
    Friday: Leftovers

    Sunday: Grilled pork tenderloin (made 2 pounds and saved 1 for tomorrow) with mango relish; green beans and lentils on the side

    Monday: Chicken Nicoise (using chicken tenders instead of seared tuna which I really would have loved but am too paranoid to risk it)

    Tuesday: Pork sliders with mango slaw (using leftovers from yesterday)

    Wednesday: Pecan crusted chicken with honey mustard potato salad

    Thursday: Lentil kale salad (made double lentils yesterday so I don't have to cook them again)

    Friday:  Leftovers or pizza

    I've been sticking to my Sunday meal prep times and it helps so much with not being on my feet as much during the week for dinner nights.  I've started sitting down to prep/chop stuff, but still get pretty tired on Sundays.  At least it's only one day a week though!

    Monday: chicken Parmesan
    Tuesday: slow cooker shredded beef with sweet potatoes. (French fries for my picky DH)
    Wednesday: taco night with fajita veggies
    Thursday: cheese ravioli and turkey meatballs.
    ~First time mama, strikingly handsome husband, comedic pooch, krumpin' baby girl on her way~

    DH is now obsessed with starting the P90X meal plan, so he grocery shopped & is in charge of cooking until he realizes he doesn't have time to cook dinners & lets me take over meal planning again. :) Don't worry, I'm adding carbs to my meals & won't be on a true "diet" during pregnancy.

    I do a lot of cooking over the weekend so that we can have leftovers and easy meals on weeknights. This week my husband is making a giant pot of chicken soup, so we'll have that a few times. Plus leftover short ribs that I made last night and hot dogs.

    I will play this week...

    Monday: tacos (with a side of acid reflux)
    Tuesday: kielbasa and pierogies & salad too @Talkativ15‌!!!!
    Wednesday: garlic cheddar baked chicken over rice or salad
    Thursday: grilled steak or chicken whatever is on sale
    Friday: DH is camping so I will do takeout probably :)

    Pizza (take out), grilled pork loin, crockpot chicken salsa, tacos, beef stroganoff. We don't turn on the oven when it's hot! ;)

    I actually planned and shopped for the week! Feeling pretty good...

    Monday: leftover homemade pizza
    Tuesday: chicken curry
    Wednesday: sausage and peppers
    Thursday: beef & broccoli
    Friday: steak bites, baked potatoes
    Saturday night=date night and Sunday DH will probably just BBQ something.

    In no particular order this is what we have listed until the next payday. 

    Tacos
    Angel hair pasta with garlic butter sauce and tossed chicken
    Spagetti
    Beans and cornbread
    Chicken and Rice
    Pizza
    Chili frito Pie
    Hotdogs and French fries
    Breakfast omlet with potatoes, hominy and eggs etc
    BBQ chicken
    Grilled cheese with tomato soup
    La Pasada


    (most items will be homemade version- with some store bought ingredients thrown in as needed)

    My husband helps cook pretty often as do my older teens- so I am thankful for that!! :-) 

     Christian Homeschooling Mama to 9 kids and Grandma to 1 (so far!) YES we would love to have more! 
    Baby #9- It's a GIRL!!  Born Oct 1st 2014!!

    Forever missing my 7 m/c babies now safe in the arms of Jesus!
