Thank you @theultimatesak!  I tried making a paleo version last year, but I tried making an AIO pumpkin spice syrup plus creamer.  I think I'll try this syrup and leave my creamer separate.  I suppose I can handle 2 steps to making my coffee in the morning.

I don't have pumpkin spice.  I always combine my spices for pumpkin pies.....

That and opening a can of pumpkin puree for that little would be a waste.  What do you do with the rest of it?

Make pumpkin bread. Or pumpkin gnocchi. Or pumpkin pie. Or pumpkin custard. Or freeze it in an ice cube tray for lots of pumpkin spice coffee. Ooh, pumpkin ice cream.

Not really. Just put te pumpkin in a mixer, add in an egg, nutmeg, salt and pepper. Then add in flour till it just makes a dough. Maybe a cup and a half? Then roll, cut, boil, and sauté in safe brown butter. OMG. I want this now.

That sounds good.  I even have a little hand crank cavatelli maker that I could put it through.  What kind of sauce? Is it good just buttered?

ETA: Duh, you just told me browned butter.

^^^This is why I can't pack up my kitchen.  I keep wanting to pack away my cooking stuff and eat sandwiches all week and then I'm like "But what if I NEED to make pumpkin gnocchi with pumpkin beer braised sausage for dinner?????"
