This was a baking week for me. The paleo bread I buy for sandwiches for DS1 went up in price to like $15/loaf. I was like, um, no. So I spent the week perfecting my grain-free "bread" recipes.
I liked this recipe the best, although I had problems with tunneling just like the blog post said. I had to turn down the temp and up the bake time.
I made the same recipe into banana muffins by taking out two eggs and replacing them with three bananas. I made them in mini muffins and they were delish.
I also made this grain-free, dairy-free, processed sugar-free cake, except I subbed coconut flour for the almond flour and used whipped coconut oil instead of butter for the frosting. Yum!
And then on the crafty side, DH and I made the kids boomerangs yesterday (any excuse to use his power tools). Well, DH made them and I oversaw the kids decorating them. lol
We've been throwing boomerangs ever since. My boys are obsessed!
The flavor was good, but they were way too mushy. It said to boil them for 3 minutes. Next time I will skip that and just throw them in the oven. I HATE mushy zucchini. I did eggplant boats too, which were also yummy.
I can actually participate this week! On a whim, we made playdough with flour, salt, water, and veggie oil. After trying to eat it once or twice and realizing it might as well be a salt lick, Jax finally played with it lol.
I meant to post this last week, but I forgot. I made my DD a "water blob" to play on and she had a blast. It was pretty simple to make and I think I will be able to get a couple more uses out of it.
Our best friends are due any day with their first baby. They shared her name with us last week and I found this and decided to make her some personalized blocks. I used wood from a local factory that closed in the 60's and my step grandmother had piled in her bard, the left over paint from the baby's room, and my cricut to cut out the letters. I am pretty happy with the way they turned out!

It's sad because I have so many pins I'd love to try but zero time to do it.
I made birthday cake dip a couple times. I could eat that shit all day long.
