We struggle a lot. I've basically given up for now and just make sure he gets a Carnation Good Start everyday. We buy the packets and use half a packet a day. I still offer healthy food. He would just rather eat waffles, fruit and oatmeal right now. Sorry I'm not any help. We were able to get him to eat veggie muffins for a while, but I think he figured that out...
I have a very picky eater. She only eats pancakes, waffles, toast, pasta, and eggs. She eats some fruit and nutrigrain bars too. So I make her a fruit and veggie smoothie with yogurt every day and she gobbles it up! So even though she eats like crap, I know she's getting nutrition with the smoothies. She will eat any fruit and veggie in a smoothie!
I just keep trying. Somedays she will eat everything in sight and other days she will eat nothing. I try to roll with it even though it frustrates me to no end when she won't eat. She has recently decided veggies might not be out to get her and has been more willing to try them.
I second the suggestion of Ellyn Satter. Trying to get them to eat usually leads to the opposite happening. She explains why, using studies done with young children. She really showed me a new way to think about feeding my daughter. I give her healthy options (the same food the rest of us eat), and she decides what and if she wants to eat it. It has taken away all the struggle, and as long as I don't slip back into bad habits, she's eating better than she was before.

Every time we try to give her something new she looks at it with disgust and says "ew, gross! this is ew"
