1.25 pounds turkey
sausage meat (I use spicy turkey sausage)
2 tsp olive oil
2 cloves garlic
½ bunch of
kale, rinsed & roughly chopped
2 cans Great
Northern Beans, drained and rinsed
6 Cups reduced
sodium chicken broth
2 cups water
Onion, carrot,
celery (or any vegetables on hand), chopped
Salt, pepper,
and dried red pepper flakes to taste
Directions:
Heat
oil over medium-high heat in your pot.Add sausage, breaking it up with spoon as it cooks.When partially cooked add onion.When meat is completely cooked add garlic and
sauté for 2-3 minutes at most (don’t burn the garlic).Add the water, broth, beans, veggies, salt,
pepper, and red pepper flakes and let simmer for 10 minutes.Add kale and simmer for another 10
minutes.

I also make a yummy veggie tortilla soup, but don't have exact amounts, I add depending on what is in my fridge. Its hard to mess up though.
Saute one roma tomato, carrots, onion, celery, garlic until soft. Add to small pot of hot veggie stock, and blend (I use an immersion blender, my mom uses a counter blender). Add taco seasoning and cayenne pepper. Add shredded spinach and boil until wilted. Serve with crumbled tortilla chips on top.
@LilNunz1 - at my Target they sell them already made in the container straight from Panera (or so it looks). I just discovered this yesterday and I did a little happy dance in the aisle.
Look up "Eva Longoria Chicken Tortilla Soup" on Pinterest. It is sooooo yummy. Trisha Yearwood's is good too. And Pioneer Woman has an italian chicken soup with dumplings that is to die for. Sorry, I'm on my phone, otherwise I'd post links!
