Turkey Sausage, Kale, and White Bean Soup
1.25 pounds turkey
sausage meat (I use spicy turkey sausage)
2 tsp olive oil
2 cloves garlic
½ bunch of
kale, rinsed & roughly chopped
2 cans Great
Northern Beans, drained and rinsed
6 Cups reduced
sodium chicken broth
2 cups water
celery (or any vegetables on hand), chopped
and dried red pepper flakes to taste
oil over medium-high heat in your pot.
Add sausage, breaking it up with spoon as it cooks. When partially cooked add onion. When meat is completely cooked add garlic and
sauté for 2-3 minutes at most (don’t burn the garlic). Add the water, broth, beans, veggies, salt,
pepper, and red pepper flakes and let simmer for 10 minutes. Add kale and simmer for another 10

I just discovered that Target sells Panera soups so that is my recipe :)

I have used turkey sausage as well as regular sausage - both ways are great!
