*I am doing ok, but LOs eczema has really flared up and I feel bad. I have been lax on what Im eating and I had some cheese and thats probably what its from but I am not completely sure.
2. What food are you missing the most that you can't have right now?
*cheese...cheese...cheese...did I mention cheese
3. Please share your current favorite MSPI-friendly dinner recipe!
*chicken enchilada bake. Dump a bunch of chicken in the crock pot and cover with enchilada sauce, cook on high for 4-6 hours until chicken shreds. Take tortillas and dredge them in enchilada sauce and shred chicken and put with black beans, corn, zucchini, and squash. Layer the tortillas and chicken/ veg mixture. Bake in the oven to warm through. Ladle a little more sauce and top with cilantro and avocado.

*DD is 11 months and I am super proud that we almost made it to a year but I am so incredibly torn on weaning. I am getting a little burnt out on racking my mind over what ive eaten that LO is having issues with, and with always having to wear something that is "easy access" for nursing since LO likes to ask for milk all the time and then only nurses for a few seconds... but then again, im not really ready to let it go. Ugh why does this have to be so hard.
That recipe sounds yummy! Is there a specific brand of enchilada sauce you like to use?
I feel you on being tired of scrutinizing what you ate... I am also dealing with watching out for reactions to new foods I introduce to him. It seems like he gets a rash from every other food I give him. I have found that as time goes on I'm worrying less about what I've eaten because I've got my tried and true safe foods. I hope that is the case for you too.
1. We're good. We all had a nasty cold last week and I still haven't given DS any more dairy. As long as he stays healthy I will give him some cheese this weekend.
2. I have really been craving pizza for months now. Mmmm pizza....
3. We made some yummy fish tacos last night: grilled salmon, sliced avocado, shredded lettuce, and a quick salsa made with cherry tomatoes and onion from the garden plus a little lime juice and red chili powder. Put it all in some corn tortillas, sorry I don't remember the brand but I will try to look at the package tonight and post it.
4. I wish I could offer some help on the testing questions, but my pedi said was to take it slow and call her if he had a bad reaction. Seems like there's no one right way to do it.
:-/1. How are you doing? How is your LO doing? I'm doing OK, LO too. I had a small piece of birthday cake Sunday and DS spit up a ton the next day, but no other symptoms so far.
2. What food are you missing the most that you can't have right now? ICE CREAM!!!!
3. Please share your current favorite MSPI-friendly dinner recipe! Hmmm.... I make a lot of pasta with olive oil and veggies.
4. Anything else you'd like to share today? I keep hoping that DS will outgrow his dairy/soy intolerance by 1 year, but so far it's not looking good. I love nursing, but he is a very distracted nurser - so it has been difficult. I am looking forward to the days where I can give him milk (cows milk, almond, coconut) so we don't have to struggle so much with nursing. And he bites me all the time!

So much! DH made pizza the other night and I could really use a DQ blizzard.
Right now I am living on homemade trail mix, salad, and chicken with wild rice.
I am loving my peanut butter cups though. Put MSPI chocolate chips in the bottom of my silicone muffin cups, pour over the peanut butter mix: 1cup pb and one third cup coconut oil melted together. Stick in the freezer.
Do you think it's a phase? My boy went through a distracted, bite-y phase around 9 mo. He was having a developmental growth spurt and teething. Nursing in a quiet room helped him focus. The biting was tougher. I'd put him down when he bit me and say, "No biting" and touch his mouth to make the connection. It took him awhile to get it.
